Method

Preparing the Lobster

Cook the Lobster

Bring a large pot of salted water to a boil. Add the whole Maine lobster and cook for 8-10 minutes until the shell turns bright red and the meat is opaque. Remove the lobster and let it cool.

Extract the Meat

Once the lobster is cool enough to handle, crack the shell and extract the meat. Cut it into bite-sized pieces and set aside.

Preparing the Salad

Wash the Greens

Rinse the Lollo Rosa, Frisée, and Petite Watercress under cold water. Spin dry or pat with a clean kitchen towel.

Prepare the Mango

Peel the ripe mango, remove the pit, and cut the flesh into thin slices or cubes.

Making the Miso Dressing

Combine Dressing Ingredients

In a small bowl, whisk together the miso paste, rice vinegar, sesame oil, honey, and water until smooth. Adjust salt to taste.

Assembling the Salad

Combine Ingredients

In a large bowl, combine the washed greens, mango pieces, and lobster meat. Drizzle the miso dressing over the salad and toss gently to combine.
