Prepare the Tuna Filling

In a medium mixing bowl, combine the drained canned tuna, softened cream cheese, finely chopped green onions, chopped capers, lemon juice, salt, and black pepper. Mix well until all ingredients are thoroughly combined and form a smooth filling.

Wrap the Filling

Take one spring roll wrapper and lay it flat on a clean surface. Place about 2 tablespoons of the tuna filling in the center of the wrapper. Fold the bottom up over the filling, then fold the sides in, and roll tightly to form a cigar shape. Seal the edge with a little beaten egg. Repeat this process for all wrappers.

In a deep pan or fryer, heat the vegetable oil over medium heat until it reaches 350°F (175°C). Carefully place the wrapped tuna cigars into the hot oil, a few at a time, ensuring not to overcrowd the pan. Fry for 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
