Preparation

Prepare the Potatoes

Wash and peel the potatoes. Cut them into small cubes. Place them in a pot of salted water, bring to a boil, and cook until tender, about 10-15 minutes. Drain and let cool.

Prepare the Vegetables

Dice the onions and heirloom tomatoes. Mince the garlic cloves.

Prepare the Beef

Trim any excess fat from the filet mignon and cut it into bite-sized cubes. Season with salt and black pepper.

Cook the Potatoes

In a skillet, heat olive oil over medium heat. Add the cooled potato cubes and cook until crispy and golden brown, about 10 minutes. Season with salt to taste. Remove from skillet and set aside.

Sear the Beef

In the same skillet, add vegetable oil and increase heat to high. Add the seasoned filet mignon cubes and sear for about 2-3 minutes until browned on all sides. Remove from the skillet and set aside.

Stir-Fry the Vegetables

Add the diced onions and minced garlic to the skillet. Stir-fry for about 2-3 minutes until the onions are translucent. Then add the heirloom tomatoes and cook for another 2 minutes.

Combine Ingredients

Return the seared beef to the skillet with the vegetables. Toss everything together and cook for an additional 2 minutes to heat through.
