Method

Dumpling Preparation

1

Make the Dough

In a mixing bowl, combine the all-purpose flour and salt. Gradually add water until a dough forms. Knead for about 5 minutes until smooth. Cover and let it rest for 30 minutes.

2

Prepare the Filling

In a bowl, mix the ground chicken or beef with ginger, garlic, soy sauce, sesame oil, and green onions. Stir until well combined.

3

Form Dumplings

Divide the rested dough into small balls. Roll each ball into a thin circle. Place a teaspoon of filling in the center, fold, and pinch to seal tightly.

Cooking Dumplings

4

Steam the Dumplings

Prepare a steamer and steam the dumplings for about 10 minutes until cooked through.

5

Prepare the Garnish

While the dumplings are steaming, wash and prepare the chrysanthemum, hydro watercress, shredded cabbage, and diced Roma tomato.

Furikake Rice Crackers

6

Season the Crackers

In a bowl, toss the rice crackers with furikake seasoning until evenly coated.

Yuzu Dressing

7

Make the Dressing

Whisk together yuzu juice, olive oil, honey, salt, and pepper in a small bowl until well combined.

Assembly

8

Plate the Dish

Serve the dumplings hot, garnished with chrysanthemum, watercress, cabbage, and Roma tomato. Drizzle with yuzu dressing and serve with furikake rice crackers on the side.
