Preparation
Prepare the Crab
If using a whole Dungeness crab, steam it for about 15-20 minutes until fully cooked. Allow it to cool, then crack the shell and remove the meat. Set aside.
Soak the Noodles
In a bowl, soak the cellophane noodles in hot water for about 15 minutes or until they are soft. Drain and set aside.
Chop the Green Onions and Garlic
Chop the green onions finely, separating the green parts from the white parts. Mince the garlic cloves.
Cooking
Make Garlic Jus
In a small saucepan, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Be careful not to burn the garlic.
Combine Ingredients
In a large skillet, add the white parts of the green onions, cooked Dungeness crab meat, and the soaked cellophane noodles. Pour the garlic jus and soy sauce over the mixture. Toss everything together to combine.
Season
Season the mixture with salt and black pepper to taste. Cook for an additional 3-5 minutes until everything is heated through.
Garnish and Serve
Remove from heat, garnish with the green parts of the chopped green onions, and serve immediately.
