Prepare the Ingredients
Gather all the ingredients. Rinse the haricot vert and cut them into 1-inch pieces. Chop the green onions, separating the green and white parts.
Cook the Rice
If you haven't already, cook the jasmine rice according to package instructions and let it cool. It's best to use day-old rice for fried rice.
Cooking
Sauté the Vegetables
In a large skillet or wok, heat sesame oil over medium heat. Add minced garlic and the white parts of the green onions. Stir-fry for about 30 seconds until fragrant.
Add Haricot Vert
Add the haricot vert to the skillet and stir-fry for another 2-3 minutes until tender-crisp.
Combine Ingredients
Add the cooked jasmine rice, Dungeness crab meat, soy sauce, salt, and black pepper to the skillet. Mix everything together, ensuring the crab and rice are evenly combined.
Finish and Serve
Continue to stir-fry for another 3-4 minutes until everything is heated through. Garnish with the green parts of the green onions before serving.
