Preparation

Prepare the Vegetables

Wash and chop the bok choy and Chinese broccoli into bite-sized pieces. Remove the ends of the snow peas. Slice the green onions, keeping the white and green parts separate.

Prepare the Aromatics

Mince the garlic and ginger.

Make the Sauce

In a small bowl, combine soy sauce, sesame oil, rice vinegar, chili flakes, and sugar. Stir until sugar is dissolved.

Heat the Wok

Heat the vegetable oil in a large wok or skillet over high heat until shimmering.

Stir-Fry Aromatics

Add the minced garlic and ginger to the hot oil. Stir-fry for about 30 seconds or until fragrant.

Add Vegetables

Add the bok choy and Chinese broccoli to the wok. Stir-fry for 2-3 minutes, until they start to wilt.

Add Snow Peas

Add the snow peas and the white parts of the green onions to the wok. Continue to stir-fry for another 2 minutes.

Add Sauce and Finish Cooking

Pour the prepared sauce over the vegetables. Stir-fry for another 1-2 minutes until everything is well coated and heated through.

Serve

Remove from heat, garnish with the toasted sesame seeds and the green parts of the green onions. Serve immediately.
