    Prepare the Crab

    Start by cleaning the Dungeness crabs under cold running water to remove any sand or debris. Use a brush to scrub the shells gently. Once cleaned, place the crabs in a large pot of boiling salted water for about 5-7 minutes to par-cook them. Remove and let them cool slightly.

    Mince the Garlic

    While the crabs are cooling, peel and mince the garlic cloves finely. Set aside.

Roasting

    Prepare the Garlic Butter

    In a saucepan over medium heat, melt the butter and olive oil together. Add the minced garlic, salt, black pepper, and paprika. Cook for about 3-4 minutes until the garlic is fragrant but not browned. Remove from heat and stir in the lemon juice and chopped fresh parsley.

    Stuff the Crab

    Preheat your oven to 375°F (190°C). Once the crabs are cool enough to handle, gently open the shells and remove any inedible parts. Brush or spoon the garlic butter mixture generously over the crab meat inside the shells.

    Roast the Crab

    Place the stuffed crabs on a baking sheet. Roast in the preheated oven for about 15-20 minutes, or until the crab meat is heated through and the tops are slightly golden.

    Serve the Crab

    Remove the crabs from the oven and let them cool for a few minutes. Serve hot, garnished with additional parsley if desired, along with lemon wedges on the side.
