Cooking Noodles

    Boil Water

    In a large pot, bring 4 liters of water to a rolling boil. Add 1 tablespoon of salt to the water.

    Cook Noodles

    Add 8 cups of spaghetti or linguine to the boiling water. Cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain Noodles

    Once cooked, drain the noodles in a colander and set aside. Do not rinse.

Roasting Garlic

    Prepare Garlic

    Preheat your oven to 400°F (200°C). Cut the tops off 2 garlic bulbs to expose the cloves.

    Roast Garlic

    Drizzle 2 tablespoons of olive oil over the exposed garlic cloves. Wrap the bulbs in aluminum foil and roast in the oven for 30-35 minutes until soft and caramelized.

    Cool and Squeeze

    Once roasted, remove from the oven and let cool. Squeeze the garlic out of the skins into a bowl and mash until smooth.

Making AN's Secret Sauce

    Combine Ingredients

    In a bowl, mix together 1 cup of soy sauce, 1 cup of oyster sauce, 2 tablespoons of brown sugar, 1 tablespoon of sesame oil, 1 teaspoon of chili flakes, and 1 teaspoon of ground black pepper until well combined.

    Add Roasted Garlic

    Add the mashed roasted garlic to the sauce mixture and stir until fully incorporated.

Combining Everything

    Mix Noodles and Sauce

    In a large mixing bowl, combine the drained noodles with the garlic sauce mixture. Toss well to ensure the noodles are evenly coated.

    Garnish and Serve

    Transfer the garlic noodles to a serving platter. Garnish with 0.5 cups of chopped green onions and 2 tablespoons of sesame seeds. Serve warm.
