Method

For the Carbonated Water

  1. 1

    Prepare water

Start with 1 liter of very cold, filtered water. Cold water absorbs CO2 better, so chill the water in the refrigerator for at least 1 hour or use pre-chilled water.

  2. 2

    Optional mineral adjustment

If you want a slightly fuller mouthfeel similar to some bottled mineral carbonated waters, dissolve 1/4 teaspoon of a food-grade mineral salt blend (a small pinch of calcium sulfate and magnesium sulfate or a commercially available mineral concentrate) into the chilled water. Stir gently until fully dissolved.

  3. 3

    Carbonate

Using a home soda maker (SodaStream-style) or a CO2 regulator and siphon bottle: follow the manufacturer's instructions to carbonate the chilled water. For a medium-to-high level of effervescence, apply 2 to 3 short bursts of CO2 or carbonate to approximately 4–5 volumes of CO2 (manufacturer settings vary). If using a siphon with a CO2 cartridge, charge the bottle once, shake gently for 10–15 seconds, then release and check fizziness; repeat if needed.

  4. 4

    Rest and stabilize

After carbonation, let the bottle sit upright in the refrigerator for 10–15 minutes to allow CO2 to equilibrate and reduce large bubbles. This helps the carbonation feel finer on the palate.

  5. 5

    Transfer and seal

If carbonating in a soda maker bottle, keep it sealed and store cold. If you used a siphon, dispense into a clean, cold, thick-walled bottle or pitcher and immediately cap with a tight-fitting lid to retain carbonation.

For Serving (optional)

  1. 6

Serve the carbonated water cold. Add ice cubes if desired and garnish with a lemon or lime wedge. Pour gently down the side of the glass to preserve small bubbles and present a crisp, San Felice-style sparkling water experience.
