    Prepare ginger

    Peel the fresh ginger with a spoon or peeler and slice it thinly (about 3 oz by weight, or roughly a 2–3-inch piece). Thin slices release flavor faster than chunks.

    Make syrup

    In a small saucepan combine 1 cup sugar, 1 cup water, the sliced ginger, and the optional whole cloves. Bring to a gentle boil over medium heat, stirring to dissolve the sugar.

    Simmer

    Lower heat and simmer gently for 10–12 minutes, uncovered, until the liquid is fragrant and slightly reduced.

    Finish syrup

    Remove from heat, stir in 1 tablespoon fresh lemon juice to brighten flavor, and let cool to room temperature with ginger still steeping for at least 20–30 minutes (longer for stronger flavor).

    Strain and store

    Strain the syrup through a fine-mesh sieve or cheesecloth into a clean jar or bottle, pressing on solids to extract liquid. Discard solids. Refrigerate the syrup; it will keep 2–3 weeks chilled.

To Assemble Ginger Ale

    Fill a tall glass with about 1/2 to 3/4 cup ice (or use a pitcher for multiple servings).

    Add 2 to 3 tablespoons of the chilled ginger syrup per 8 ounces (1 cup) of club soda to each glass. Start with 2 tablespoons and adjust to taste for sweetness and ginger intensity.

    Pour 1 cup (8 fl oz) chilled club soda or sparkling water into the glass over the syrup and ice. Stir gently once or twice to combine, being careful not to flatten the bubbles.

    Taste and adjust: if you want a sweeter or spicier drink, add an extra 1/2 to 1 tablespoon ginger syrup. For a tarter profile, squeeze in a wedge of lime or lemon.
