    Make Simple Syrup

    Combine the granulated sugar and 120 ml water in a small saucepan over medium heat. Stir until the sugar fully dissolves and the mixture is clear; do not boil vigorously. Remove from heat once dissolved.

    Add Flavorings

    While the syrup is still warm (but not boiling), stir in the caramel color, lime juice, vanilla extract, orange oil (or a small amount of orange zest infusion), lemon oil (or lemon zest infusion), ground cinnamon, grated nutmeg, and crushed coriander. Stir to combine thoroughly so the oils distribute evenly in the warm syrup.

    Infuse and Rest

    Let the syrup sit at room temperature for 30 minutes to allow the spice and citrus flavors to marry. If using zest instead of essential oils, you can steep the zest in the syrup and strain after resting.

    Strain and Optional Additions

    If you used zest or whole spices, strain the syrup through a fine mesh sieve or cheesecloth into a clean container. If you want caffeine, dissolve the measured food-grade caffeine powder into a tablespoon of warm syrup and stir into the batch (optional and only if you are comfortable handling caffeine). Taste and adjust: add up to 1/2 tsp more vanilla or a few drops more citrus oil if needed.

    Cool

    Refrigerate the finished syrup until chilled, at least 1 hour. The syrup can be stored in a sealed jar in the refrigerator for up to 2 weeks.

Carbonation and Serving

    Assemble the drink: for each serving, fill a tall glass with ice. Add 60 ml (about 1/4 cup) of the chilled cola syrup to the glass.

    Slowly pour 200 ml of very cold carbonated water over the syrup and ice to preserve bubbles. Gently stir once or twice with a spoon to combine, avoiding vigorous stirring that will flatten the carbonation.

    Taste and adjust: if desired, add more syrup 10–15 ml at a time for a sweeter, stronger cola flavor. Garnish with a lime or lemon wedge and serve immediately.

    Batch mixing option: to make a larger batch for 4 servings, mix 240 ml chilled cola syrup with 800 ml cold carbonated water in a pitcher; gently stir and serve over ice.
