Method

Starlight Spritz (makes 2 servings)

    Chill glassware

    Place two wine or large stemmed glasses in the fridge or fill briefly with ice water to chill while you prepare the cocktails.

    Mix base

    In a cocktail shaker, add 60 ml gin, 30 ml elderflower liqueur, 30 ml fresh lemon juice and 20 ml simple syrup. Add a handful of ice (from the 2 cups listed) and shake vigorously for 8–10 seconds until well chilled.

    Build and top with sparkling

    Discard the chilling ice/water from the glasses and add a few fresh ice cubes to each. Strain the shaken mixture evenly between the two glasses. Top each glass with 120 ml sparkling wine (240 ml total). Stir gently once to integrate.

    Add shimmer & garnish

    Divide the edible pearlescent glitter (0.25 tsp total) between the two glasses — a very light sprinkle into each will create a subtle shimmer. Garnish each glass with one lemon wheel and serve immediately.

    Prepare mugs

    If using copper mugs or short tumblers, place them in the freezer for 5–10 minutes or fill briefly with ice water to chill. Reserve the 2 cups of ice for building the drinks.

    Combine spirits and citrus

    In a cocktail shaker (no need for a firm dry shake), add 90 ml vodka, 30 ml Blue Curaçao and 30 ml fresh lime juice. Add a small handful of ice and shake for 6–8 seconds to chill and combine.

    Assemble the mule

    Fill the chilled mugs with fresh ice from the reserved ice. Strain the spirit/citrus mixture evenly into the two mugs. Top each mug with 120 ml ginger beer (240 ml total) and stir gently once to marry flavors.

    Garnish

    Place a lime wheel on the rim of each mug and tuck a fresh mint sprig into each drink. Serve with a short straw and a smile.

Blackberry Syrup (makes ~120 ml)

    Cook the syrup

    Combine 150 g fresh blackberries, 100 g granulated sugar and 120 ml water in a small saucepan. Bring to a gentle simmer over medium heat, stirring occasionally, until the sugar dissolves and the berries break down (about 6–8 minutes).

    Strain and cool

    Remove from heat and press the fruit through a fine mesh sieve into a heatproof bowl to extract solids and juice; discard seeds and pulp. Let the syrup cool to room temperature, then chill in the fridge. This yields ~120 ml of syrup; use 60 ml for the Nebula Nightcap and reserve the rest for more cocktails or soda.

Nebula Nightcap (makes 2 servings)

    Chill & prepare

    Chill two short glasses by placing them in the fridge or filling briefly with ice water. Reserve the 2 cups of ice for the drinks.

    Combine ingredients

    In a mixing glass, add 120 ml dark rum, 60 ml chilled blackberry syrup, 30 ml fresh lime juice and 6 dashes of Angostura bitters. Add ice and stir gently for 15–20 seconds to chill and dilute slightly.

    Serve

    Discard the chilling ice/water from the glasses and fill with fresh ice. Strain the mixed cocktail evenly into the two glasses. If you prefer a lighter, fizzy finish, top each glass with 30 ml sparkling water (60 ml total).

    Garnish & finish

    Thread 6 fresh blackberries on short cocktail picks (or float them) and place one pick per glass. Optionally express a citrus peel over the top for an aromatic hit. Serve immediately.
