    In a blender or food processor, blend the rolled oats until they reach a fine flour consistency.

    In a large bowl, combine the blended oats, all-purpose flour, baking powder, and salt.

    In another bowl, whisk together the milk, eggs, honey (or maple syrup), vanilla extract, and cooking oil (or melted butter).

    Combine Ingredients

    Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; some lumps are okay.

    Cook the Pancakes

    Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
