Bagel Preparation

Prepare the Dough
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until foamy. In a large mixing bowl, mix flour and salt. Add the yeast mixture and mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a lightly greased bowl, cover, and let it rise for about 1 hour until doubled in size.

Shape the Bagels
Preheat the oven to 425°F (220°C). Punch down the dough and divide it into 12 equal pieces. Roll each piece into a ball and then poke a hole in the center to form a bagel shape.

Boil the Bagels
In a large pot, bring water to a boil and add baking soda. Boil each bagel for about 30 seconds on each side, then remove and place on a baking sheet lined with parchment paper.

Add Toppings
Sprinkle the tops of the bagels with poppy seeds and sesame seeds, if desired.

Bake the bagels in the preheated oven for 15-20 minutes or until golden brown. Allow them to cool slightly before serving.
