    In a blender, pulse the rolled oats until they reach a flour-like consistency. This will be your oat flour.

    In a large bowl, combine the oat flour, all-purpose flour, baking powder, and salt. Whisk together until well mixed.

    In another bowl, whisk together the milk, egg, honey (or maple syrup), and vanilla extract until fully combined.

    Combine Mixtures

    Pour the wet mixture into the dry ingredients. Stir until just combined. Be careful not to overmix; a few lumps are okay.

    Cook the Pancakes

    Heat a non-stick skillet or griddle over medium heat and add a little cooking oil or butter. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles form on the surface. Flip and cook for another 2-3 minutes until golden brown.
