    Prepare the Filling

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 3-4 minutes. Add the shrimp and cook until they turn pink, about 2-3 minutes. Stir in the lump crabmeat and cook for another minute. Season with salt and black pepper. Remove from heat and set aside.

    Prepare the Omelet

    In a bowl, whisk the eggs with a pinch of salt and black pepper. In the same skillet, add the remaining tablespoon of olive oil and heat over medium-low. Pour the beaten eggs into the skillet, tilting to spread evenly.

    Combine and Cook

    As the eggs begin to set, add the shrimp and crab mixture evenly over one half of the omelet. Sprinkle the shredded Swiss cheese on top. Once the eggs are almost fully set, carefully fold the omelet in half over the filling and cook for another 1-2 minutes until the cheese melts.

    Serve
