Prepare the Crust

Preheat your oven to 350°F (175°C). Crush the chocolate cookies into fine crumbs and mix with melted butter. Press the mixture into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes, then let cool.

Make the Chocolate Cake

In a large bowl, whisk together sugar, flour, cocoa powder, baking powder, and salt. In another bowl, beat the eggs and add vanilla extract. Combine the wet and dry ingredients, then pour the batter into the prepared crust. Bake for 25-30 minutes or until a toothpick comes out clean. Allow to cool completely.

Prepare the Chocolate Mousse

Melt the semi-sweet chocolate in a double boiler or microwave. In a separate bowl, whip the heavy cream until stiff peaks form. Once the chocolate is slightly cooled, fold it gently into the whipped cream until fully combined.

Assemble the Cake

Once the cake has cooled, spread the chocolate mousse evenly over the top. Refrigerate for at least 2 hours to set.

Serve

Before serving, sprinkle toasted almonds on top of the mousse. Slice and enjoy your decadent chocolate mousse cake!
