Marinate Calamari
In a bowl, combine the calamari rings and buttermilk. Cover and refrigerate for at least 30 minutes.
Prepare Breading
In a separate bowl, mix together the flour, cornstarch, salt, black pepper, garlic powder, and paprika.
Heat Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Bread Calamari
Remove the calamari from the buttermilk and allow excess to drip off. Dredge the calamari in the flour mixture until well coated.
Fry Calamari
Carefully place the coated calamari in the hot oil, frying in batches to avoid overcrowding. Fry until golden brown, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.
Serve
Serve the fried calamari hot with marinara sauce, topped with grated Parmesan cheese and lemon wedges on the side.
