Marinate the Alligator

In a bowl, soak the cubed alligator meat in buttermilk for at least 1 hour, or overnight for best results.

Prepare the Dredging Mixture

In a separate bowl, combine cornstarch, all-purpose flour, Cajun seasoning, salt, and black pepper.

Heat the Oil

In a deep skillet or fryer, heat oil to 350°F (175°C).

Dredge the Alligator

Remove alligator meat from buttermilk, shaking off excess. Dredge each piece in the flour mixture until fully coated.

Fry the Alligator

Carefully place coated alligator pieces into the hot oil. Fry in batches for 3-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.
