Prepare the Cajun Potatoes
Boil the potatoes in salted water until tender, then drain. Toss with Cajun seasoning, salt, and pepper. Heat vegetable oil in a skillet over medium heat, add the potatoes, and cook until crispy, about 5-7 minutes.

Cook the Crawfish Cakes
In the same skillet, add more vegetable oil if needed, and cook the crawfish cakes until golden brown on both sides, about 3-4 minutes per side. Remove and keep warm.

Fry the Eggs
In a small frying pan, cook the eggs to your liking (sunny side up, over easy, etc.).

Assemble the Bayou Bowl
On a plate, layer the crispy crawfish cakes, top with Cajun potatoes, and then place the fried eggs on top. Drizzle with crawfish cream sauce and garnish with chopped green onions.
