Marinate the Chicken

In a bowl, combine olive oil, garlic, cumin, coriander, paprika, turmeric, cinnamon, salt, black pepper, and lemon juice. Add the chicken thighs and coat well. Cover and marinate for at least 30 minutes (or up to overnight in the refrigerator).

Cook the Chicken

Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let it rest for a few minutes.

Prepare the Tzatziki

In a bowl, mix the Greek yogurt, shredded cucumber, diced tomato, and sliced red onion. Stir well and season with salt and pepper to taste.

Assemble the Shawarma

Slice the cooked chicken into strips. Serve the chicken in pita bread, topped with the tzatziki mixture and additional vegetables if desired.
