Prepare the Mixture
In a large mixing bowl, combine the boudin sausage (removed from casing), cooked rice, chopped green onions, egg, Cajun seasoning, salt, and black pepper. Mix until well combined.
Form the Balls
Using your hands, form the mixture into golf ball-sized balls and set them on a plate.
Bread the Boudin Balls
Roll each ball in flour, dip in beaten egg, and then coat with bread crumbs. Make sure they are evenly coated.
Heat the Oil
In a deep fryer or heavy pot, heat oil to 350°F (175°C).
Fry the Balls
Carefully add the breaded boudin balls to the hot oil in batches. Fry until golden brown, about 4-5 minutes. Remove and drain on paper towels.
Serve
Serve the fried boudin balls hot with your favorite dipping sauce.
