Cake Preparation

  1. 1

    Preheat and Prepare

Preheat your oven to 350°F (175°C) and grease and flour three 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.

  3. 3

    Combine Wet Ingredients

Add eggs, milk, oil, and vanilla to the dry ingredients and mix until combined.

  4. 4

    Add Boiling Water

Carefully stir in boiling water until the batter is smooth (the batter will be thin).

  5. 5

    Bake the Cake

Pour the batter evenly into the prepared pans and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

  6. 6

    Cool the Cakes

Remove from the oven and cool in the pans for 10 minutes before transferring to wire racks to cool completely.

Chocolate Mousse Preparation

  1. 7

    Melt Chocolate

In a microwave-safe bowl, melt the chocolate chips until smooth. Let it cool slightly.

  2. 8

    Whip Cream

In another bowl, whip the heavy cream, powdered sugar, and vanilla until soft peaks form.

  3. 9

    Combine Mixtures

Fold the melted chocolate into the whipped cream until fully combined.

  4. 10

    Prepare Gelatin

In a small bowl, sprinkle gelatin over water and let it sit for a few minutes. Then microwave until melted and stir into the mousse mixture.

Assembly

  1. 11

    Layer the Cake

Once the cakes are cooled, place one layer on a serving plate and spread a generous layer of chocolate mousse on top.

  2. 12

    Repeat Layers

Add the second layer of cake and repeat the process. Top with the third layer.

  3. 13

    Chill the Cake

Chill the assembled cake in the refrigerator for at least 2 hours to set the mousse.

  4. 14

    Prepare Ganache

Heat the heavy cream for the ganache until just boiling, then pour over the chocolate chips in a bowl. Let sit for a few minutes and stir until smooth.

  5. 15

    Frost the Cake

Pour the ganache over the chilled cake, letting it drip down the sides.

  6. 16

    Garnish

Top with chocolate curls as desired.
