Method

Brewing Instructions

  1. 1

    Mashing the Grains

In a large brew kettle, heat 6 liters of water to about 165°F (74°C) and add the Pale and Crystal malts. Maintain the temperature for about 60 minutes, stirring occasionally.

  2. 2

    Sparging

After mashing, sparge the grains with hot water (around 170°F or 77°C) until you collect about 5 gallons of wort.

  3. 3

    Boiling the Wort

Bring the wort to a boil. Once boiling, add the Cascade hops and boil for 60 minutes. Stir occasionally and be cautious of boil-overs.

  4. 4

    Cooling the Wort

After 60 minutes, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

  5. 5

    Fermentation

Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast. Seal with an airlock and let it ferment for about 1-2 weeks at room temperature.

  6. 6

    Bottling

After fermentation is complete, dissolve the priming sugar in a small amount of boiling water and add it to the beer before bottling. Fill bottles and cap them.

  7. 7

    Carbonation

Allow the bottled beer to carbonate for about 1-2 weeks at room temperature before chilling and enjoying.
