    Clean the Oysters

    Rinse the fresh oysters under cold running water to remove any dirt and sand. Use a brush if needed for stubborn debris.

    Shuck the Oysters

    Using an oyster knife, carefully shuck the oysters, making sure to keep the liquor inside the shell. Discard the top shell and set the oysters aside.

Batter Preparation

    Mix the Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Whisk together until evenly mixed.

    Add the Liquid

    Pour in the beer (or sparkling water) into the dry mixture. Stir until the batter is smooth and well combined. If the batter is too thick, add a little more liquid until you reach the desired consistency.

Frying

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the surface, it’s ready.

    Dip each shucked oyster into the batter, ensuring it is fully coated.

    Fry the Oysters

    Carefully place the battered oysters into the hot oil. Fry in batches to avoid overcrowding. Cook for about 2-3 minutes, or until golden brown and crispy. Use a slotted spoon to remove the oysters and drain on paper towels.

    Arrange the fried oysters on a serving plate. Serve immediately with lemon wedges and tartar sauce on the side.
