Calamari Preparation

Method

Calamari Preparation

  1. 1

    Clean the Calamari

Rinse the fresh calamari under cold water. Remove the skin and cut the bodies into rings about 1/2 inch thick. Set aside.

  2. 2

    Prepare the Coating

In a mixing bowl, combine the all-purpose flour, salt, black pepper, and paprika. Mix well.

  3. 3

    Prepare the Dipping Mixture

In another bowl, whisk together the eggs and milk until fully combined.

  4. 4

    Coat the Calamari

Dip the rings of calamari into the egg mixture, allowing excess to drip off, then coat them in the flour mixture. Shake off any excess flour.

  5. 5

    Coat with Breadcrumbs

After coating with flour, dip the calamari rings back into the egg mixture and then into the breadcrumbs. Ensure they are well-coated.

Frying

  1. 6

    Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 7

    Fry the Calamari

Carefully add the coated calamari to the hot oil in batches. Do not overcrowd the pan. Fry for 2-3 minutes or until golden brown and crispy.

  3. 8

    Drain the Calamari

Using a slotted spoon, remove the fried calamari from the oil and place them on a plate lined with paper towels to drain excess oil.

  4. 9

    Serve

Serve the fried calamari hot with lemon wedges and sprinkle with fresh parsley, if desired.
