Method

Preparation

  1. 1

    Clean the Clams

Rinse the clams under cold water to remove any sand and grit. Soak them in water for about 20 minutes to help release any trapped sand.

  2. 2

    Chop the Aromatics

Finely chop the garlic and shallots. Set aside for later use.

  3. 3

    Prepare the Optional Ingredients

If using, slice the lemon into wedges and set aside. Measure out the red pepper flakes.

Cooking

  1. 4

    Sauté the Aromatics

In a large pot or skillet, heat the olive oil over medium heat. Add the chopped garlic and shallots, sauté until they become translucent, about 3-5 minutes.

  2. 5

    Add the Clams

Increase the heat to medium-high and add the cleaned clams to the pot. Stir to coat them in the oil and aromatics.

  3. 6

    Deglaze with Wine

Pour in the white wine and bring to a simmer. Cover the pot and cook for about 5-7 minutes until the clams open up.

  4. 7

    Season the Dish

Once the clams are opened, sprinkle with salt, black pepper, and red pepper flakes (if using). Stir to combine.

  5. 8

    Garnish and Serve

Remove from heat and stir in the chopped parsley. Serve the clams with lemon wedges on the side for squeezing over the top.
