Sauté the Onions
In a medium skillet, heat a tablespoon of oil over medium heat. Add the chopped Vidalia onions and sauté for about 5-7 minutes, or until they become soft and translucent. Remove from heat and let cool.

Combine Ingredients
In a large mixing bowl, combine the sautéed onions, shredded sharp cheddar cheese, mayonnaise, paprika, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Prepare for Baking
Preheat your oven to 350°F (175°C).

Transfer to Baking Dish
Transfer the onion mixture to a greased baking dish, spreading it evenly.

Bake the Dip
Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.

Remove the dip from the oven and let it cool slightly. Serve warm with Frito Scoops for dipping.
