Method

Preparation

  1. 1

    Prepare the Rub

In a bowl, combine brown sugar, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Mix well until combined.

  2. 2

    Apply Rub to Brisket

Rub the spice mixture generously over the entire surface of the beef brisket. Ensure it is evenly coated. Wrap the brisket in plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Cooking

  1. 3

    Preheat and Prepare

Preheat your smoker or grill to 225°F (107°C). Ensure it has enough wood or charcoal for a long smoke.

  2. 4

    Smoke the Brisket

Place the brisket on the smoker or grill, fat side up. Smoke for about 1 hour per pound of brisket, or until the internal temperature reaches 195°F (90°C).

  3. 5

    Baste the Brisket

While the brisket is smoking, prepare the basting sauce by combining beef broth, apple cider vinegar, Worcestershire sauce, honey, and hot sauce in a bowl. Baste the brisket with this mixture every hour.

  4. 6

    Rest the Brisket

Once the brisket reaches the desired internal temperature, remove it from the heat and let it rest for at least 30 minutes before slicing.

Serving

  1. 7

    Slice and Serve

Slice the brisket against the grain into thin pieces. Serve on a platter with pickles, sliced onions, and fresh bread on the side.
