    Prepare Sweet Potatoes

    Wash and peel the sweet potatoes. Using a mandoline or sharp knife, slice the sweet potatoes into thin, even rounds (about 1/8 inch thick).

    Soak the Slices

    Place the sweet potato slices in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes for crispier chips.

    Dry and Season

    After soaking, drain the sweet potato slices and pat them dry with paper towels. In a large bowl, toss the slices with olive oil, salt, paprika, and garlic powder until well coated.

    Bake the Chips

    Preheat your oven to 400°F (200°C). Arrange the sweet potato slices in a single layer on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until the chips are golden and crispy, flipping them halfway through the baking time.

Blue Cheese Dressing

    In a medium bowl, combine blue cheese crumbles, mayonnaise, sour cream, lemon juice, garlic powder, salt, and black pepper.

    Using a whisk or fork, mix the ingredients together until the dressing is smooth and creamy. Adjust seasoning to taste.

    Cover the dressing and refrigerate for at least 30 minutes to allow the flavors to meld.
