Preparation

    Prepare the Turkey

    Rinse the turkey breast under cold water and pat it dry with paper towels.

    Make the Marinade

    In a small bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, black pepper, salt, and fresh thyme to create a marinade.

    Marinate the Turkey

    Rub the marinade all over the turkey breast, making sure to get it under the skin for maximum flavor. Cover and refrigerate for at least 2 hours, preferably overnight.

Smoking

    Prepare the Smoker

    Soak the wood chips in water for at least 30 minutes before smoking. Preheat your smoker to 225°F (107°C).

    Add the Wood Chips

    Once the smoker is preheated, drain the wood chips and add them to the smoker box or directly onto the hot coals, depending on your smoker type.

    Smoke the Turkey

    Place the marinated turkey breast on the smoker grate, skin side up. Close the smoker lid and smoke for about 3 hours, or until the internal temperature reaches 165°F (74°C).

    Rest the Turkey

    Once cooked, remove the turkey from the smoker and let it rest for at least 20 minutes before slicing.
