Preparation

    Prepare the Ham

    Preheat your smoker to 225°F (107°C). Score the surface of the double smoked ham in a diamond pattern. This will help the glaze stick and allow the smoke to penetrate the meat.

    Make the Glaze

    In a bowl, combine the brown sugar, honey, Dijon mustard, black pepper, garlic powder, and onion powder. Mix until well combined to form a thick glaze.

Smoking the Ham

    Add Wood Chips

    Soak applewood chips in water for at least 30 minutes. Once ready, drain the chips and add them to the smoker box or directly onto the hot coals.

    Smoke the Ham

    Place the prepared ham in the smoker. Brush the glaze generously over the ham. Smoke for about 2 to 3 hours, or until the internal temperature reaches 140°F (60°C), basting with the glaze every 30 minutes.

Serving

    Prepare Serving Platter

    Once the ham is done, remove it from the smoker and let it rest for 15 minutes. Slice the ham into thin pieces.

    Arrange the Platter

    On a large serving platter, arrange the sliced smoked ham, pickles, sliced apples, cheddar cheese, and serve with mustard seeds and the fresh baguette.
