Method
Prepare the Pork Tenderloin

Preheat the Smoker
Preheat your smoker to 225°F (107°C). This low and slow method will ensure a tender and juicy pork tenderloin.

Prepare the Rub
In a small bowl, mix together salt, black pepper, garlic powder, smoked paprika, onion powder, and dried thyme.

Season the Pork
Rub the pork tenderloin with olive oil, then apply the spice rub evenly over the entire surface of the meat.

Marinate
Drizzle the apple cider vinegar over the seasoned pork and let it marinate for at least 30 minutes, or up to 2 hours for more flavor.

Smoke the Pork
Place the pork tenderloin in the smoker and smoke for about 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C).

Rest the Meat
Remove the pork from the smoker and let it rest for 10 minutes before slicing. This helps retain the juices.
Prepare the Vegetable Garnish

Sauté the Vegetables
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced carrots, bell pepper, and zucchini. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.

Season the Vegetables
Season the sautéed vegetables with salt and black pepper to taste. Toss to combine and remove from heat.
Serve

Slice and Serve
Slice the rested pork tenderloin into medallions and arrange them on a platter. Serve alongside the sautéed vegetables for a complete meal.
