Pork Preparation

    Marinate the Pork

    In a small bowl, combine olive oil, minced garlic, chopped rosemary, salt, black pepper, and lemon juice. Rub this marinade all over the pork loin and let it marinate for at least 30 minutes, or up to 2 hours for more flavor.

    Preheat the Oven

    Preheat your oven to 375°F (190°C) while the pork is marinating.

    Sear the Pork

    In a large oven-safe skillet, heat a small amount of olive oil over medium-high heat. Once hot, add the marinated pork loin and sear on all sides until golden brown, about 3-4 minutes per side.

    Roast the Pork

    Transfer the skillet with the seared pork to the preheated oven. Roast for 25-30 minutes or until the internal temperature reaches 145°F (63°C).

    Rest the Pork

    Remove the pork from the oven and let it rest for 10 minutes before slicing. This helps to retain the juices.

    Prepare Roasted Vegetables

    Chop your choice of vegetables (like carrots, bell peppers, and zucchini) into bite-sized pieces. Toss with olive oil, salt, and pepper. Spread on a baking sheet and roast in the oven alongside the pork for the last 20 minutes of cooking.

    Make Mashed Potatoes

    Peel and chop potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and mash with butter, milk, salt, and pepper to taste.

    If using store-bought, simply serve in a bowl. If making homemade, peel and chop apples, then cook in a saucepan with a bit of water until soft. Mash and add sugar and cinnamon to taste.
