Meat Preparation

    Prepare the Meat

    Trim any excess fat from the chicken thighs and pork shoulder. Season generously with salt and black pepper.

    Slow Smoke the Meat

    Preheat your smoker to 225°F (107°C). Place the seasoned chicken thighs and pork shoulder in the smoker. Smoke for approximately 12 hours, or until the internal temperature reaches 165°F (74°C) for the chicken and 195°F (90°C) for the pork.

    Shred the Meat

    Once cooked, remove the meat from the smoker and let it rest for 30 minutes. Shred the chicken and pork using two forks.

Barbecue Sauce Preparation

    Make the Barbecue Sauce

    In a medium saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper. Stir well and bring to a simmer over medium heat.

    Simmer the Sauce

    Reduce heat to low and let the sauce simmer for 15 minutes, stirring occasionally. Remove from heat and let cool slightly.

    Assemble the Sandwich

    On each seeded bun, layer the shredded smoked chicken and pork. Generously drizzle with 'Shoop' barbecue sauce.

    Serve the Fowl Sandwich with a side of your choice: fries, coleslaw, or baked beans.
