Method
Prepare the Brisket

Season the Brisket
In a small bowl, mix together smoked paprika, garlic powder, onion powder, brown sugar, salt, and black pepper to create a spice rub. Rub this mixture all over the brisket, ensuring it is evenly coated.

Cook the Brisket
Place the seasoned brisket in a slow cooker and add the beef broth. Cover and cook on low for 8-10 hours or until the brisket is tender and easily pulls apart with a fork.

Slice or Chop the Brisket
Once cooked, remove the brisket from the slow cooker and let it rest for about 15 minutes. Slice or chop the brisket based on your preference.
Make the Coleslaw

Combine Ingredients
In a large bowl, combine the shredded cabbage, grated carrot, mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

Mix Well
Toss the ingredients together until the cabbage and carrot are well-coated with the dressing. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
Assemble the Sandwich

Prepare the Rolls
Slice the sandwich rolls in half and lightly toast them if desired.

On the bottom half of each roll, add a generous portion of sliced or chopped brisket. Top with a scoop of coleslaw and a few pickle slices.

Place the top half of the roll over the filled bottom half and serve immediately with additional pickles on the side.
