Season the Chicken
In a large bowl, combine salt, black pepper, garlic powder, onion powder, and paprika. Rub the seasoning mixture all over the chicken thighs, ensuring they are evenly coated.

Prepare the Slow Cooker
Place the seasoned chicken thighs into the slow cooker. Pour the barbecue sauce over the chicken, ensuring that all pieces are well coated.

Soak the Wood Chips
Soak hickory and oak wood chips in water for at least 30 minutes to prevent them from burning too quickly.
Cooking

Add Wood Chips
If using a smoker, add the soaked hickory and oak wood chips directly to the smoker box or on top of the charcoal. If using a grill, place the wood chips in a smoker pouch or wrap in aluminum foil with holes poked in it, and place it over the heat source.

Slow Cook the Chicken
Cover the slow cooker with the lid and cook on low for 6-8 hours, or until the chicken is tender and fully cooked.

Finish and Serve
Once cooked, remove the chicken thighs from the slow cooker and let them rest for a few minutes. Serve with additional barbecue sauce on the side, if desired.
