Preparation of Beef

Marinate the Beef
In a large bowl, combine soy sauce, brown sugar, apple cider vinegar, garlic powder, onion powder, smoked paprika, black pepper, and salt. Stir until sugar is dissolved.

Add Beef to Marinade
Place the lean eye of round beef into the marinade. Ensure the beef is fully submerged. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Preheat the Grill
Preheat your grill to medium-high heat.

Grill the Beef
Remove the beef from the marinade, letting the excess drip off. Grill for about 25-30 minutes, turning occasionally, until the internal temperature reaches 135°F (medium-rare) or 145°F (medium).

Rest the Beef
Transfer the grilled beef to a cutting board and let it rest for 10 minutes before slicing.
Preparing Sides

Cook Corn on the Cob
Bring a large pot of water to a boil. Add the corn on the cob and cook for 5-7 minutes until tender. Drain and set aside.

Prepare Coleslaw
In a large bowl, combine coleslaw mix, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Toss until well combined and refrigerate for at least 30 minutes before serving.
Serving

Slice and Serve
Slice the rested beef against the grain. Serve with corn on the cob and coleslaw on the side.
