Directions to Prepare Peach Melba Bread Pudding

1. Prepare the Peaches

Preheat the oven to 375°F (190°C). Slice the peaches in half, remove the pits, and place them cut-side up on a baking sheet. Drizzle with a little butter and roast for about 20 minutes until softened.

2. Prepare the Bread Pudding Mixture

In a large bowl, tear the brioche into bite-sized pieces. In a separate bowl, whisk together the eggs, milk, heavy cream, sugar, and vanilla extract until well combined. Pour the mixture over the brioche and allow it to soak for at least 15 minutes.

3. Assemble the Bread Pudding

Grease a 9x13 inch baking dish with butter. Layer half of the soaked brioche in the bottom of the dish. Spread half of the raspberry jam over the brioche, then add the roasted peaches. Top with the remaining brioche and finish with the rest of the raspberry jam.

4. Bake the Pudding

Pour any leftover custard mixture over the top of the assembled bread pudding. Bake in the preheated oven for 35-40 minutes, or until the top is golden and the center is set.

5. Serve

Allow the bread pudding to cool slightly before serving. Scoop individual portions and top with sweet tea ice cream for a delightful finish.
