Cooking the Steak

Prepare the Steak

Season the NY Strip steaks with salt and black pepper on both sides. Drizzle olive oil on the steak and let sit at room temperature for 30 minutes.

Grill the Steak

Preheat a wood-fire grill to high heat. Grill the steaks for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove and let rest for 5 minutes.

Cooking the Potatoes

Prepare the Potatoes

Boil fingerling potatoes in salted water until tender, about 15-20 minutes. Drain and set aside.

Brown the Butter

In a skillet, melt unsalted butter over medium heat until it turns golden brown. Add the boiled potatoes, rosemary, salt, and pepper, and toss until the potatoes are coated and heated through.

Blistering the Tomatoes

Blister the Tomatoes

In a separate skillet, heat olive oil over medium-high heat. Add cherry tomatoes and cook until they start to blister, about 3-4 minutes. Season with salt and pepper.

Plating the Dish

Serve

On a plate, place the grilled steak, brown butter fingerling potatoes, and blistered tomatoes. Drizzle with steak sauce and serve aioli on the side.
