Prepare the Shortbread Base
Preheat your oven to 350°F (175°C). In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Gradually mix in the all-purpose flour and salt until a soft dough forms.

Bake the Base
Press the shortbread dough into the bottom of a greased 9x9 inch baking pan. Bake for 20-25 minutes, or until lightly golden. Remove from the oven and let cool completely.

Make the Caramel Layer
In a saucepan over low heat, melt the caramel candies with the heavy cream, stirring constantly until smooth. Pour the caramel mixture over the cooled shortbread base and spread evenly. Allow it to set at room temperature.

Finish with Whipped Crème Fraîche
Once the chocolate has set slightly but is still warm, dollop the whipped crème fraîche on top and swirl gently with a spatula for a marbled effect. Allow to cool completely at room temperature or in the refrigerator until set.

Once fully set, cut into squares or bars. Serve and enjoy your homemade candy bars!
