    Cook the Grits

    In a medium saucepan, bring the water to a boil. Add the grits and a pinch of salt. Reduce heat to low and cook, stirring occasionally, until thickened (about 20-25 minutes). Stir in pimento cheese until melted and combined.

    Prepare the Catfish

    Pat the catfish fillets dry and season both sides with cajun seasoning, salt, and black pepper.

    Blacken the Catfish

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the seasoned catfish fillets. Cook for about 3-4 minutes on each side until they are blackened and cooked through.

    Plate the Dish

    On each plate, spoon the cheesy grits, top with the blackened catfish, and garnish with confit tomatoes, pickled red cabbage, and chopped chives.
