    Prepare the Vegetables

    Wash and chop the carrots, bell peppers, cauliflower, green beans, and peas. Set aside.

    Chop the Onion and Mince Garlic & Ginger

    Chop the onion into small pieces. Mince the garlic cloves and ginger.

Cooking

    Sauté the Onion, Garlic, and Ginger

    Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent. Add the minced garlic and ginger and sauté for an additional 2 minutes.

    Add the Vegetables

    Add the prepared carrots, bell peppers, cauliflower, green beans, and peas to the pot. Stir well to combine.

    Stir in the Curry Powder

    Sprinkle the curry powder over the vegetables. Stir well to coat the vegetables with the spice.

    Add Coconut Milk and Broth

    Pour in the coconut milk and vegetable broth. Stir to combine all ingredients.

    Season the Curry

    Add salt, black pepper, and lemon juice to the pot. Stir well to incorporate.

    Simmer the Curry

    Bring the mixture to a gentle simmer. Cover the pot and cook for 15-20 minutes, or until the vegetables are tender.
