Method

Tuna Preparation

  1. 1

    Prepare the Tuna

Begin by ensuring the tuna is fresh and sushi-grade. Rinse it briefly under cold water and then pat it dry with paper towels.

  2. 2

    Marinate the Tuna

In a bowl, combine the soy sauce, sesame oil, rice vinegar, and a small amount of wasabi paste. Whisk together until well mixed. Place the tuna in the marinade, making sure it is fully submerged. Allow it to marinate for 15-20 minutes.

  3. 3

    Sear the Tuna

Heat a non-stick skillet over high heat. Once hot, remove the tuna from the marinade and sear it for about 30 seconds on each side to achieve a light crust. The center should remain rare. Remove from heat and let rest.

Garnish

  1. 4

    Prepare the Garnish

While the tuna is resting, mix the black and white sesame seeds together in a small bowl. Chop the green onions and prepare the microgreens or sprouts for garnish.

Serving Sauce

  1. 5

    Mix the Sauce

In a small bowl, combine the mirin and lime juice. Stir well to create a light dipping sauce for the tataki.

Assembly

  1. 6

    Slice and Serve

Using a sharp knife, slice the seared tuna into thin pieces. Arrange on a plate and sprinkle with the mixed sesame seeds, chopped green onions, and microgreens. Serve with the dipping sauce on the side.
