Method

Preparing the Scallops

    Pat Dry

    Using paper towels, pat the scallops dry to remove excess moisture. This step is crucial for achieving a nice sear.

    Season

    Sprinkle both sides of the scallops with salt and black pepper evenly.

    Heat Oil

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Sear Scallops

    Carefully place the scallops in the skillet, making sure not to overcrowd them. Sear for about 2-3 minutes on one side until golden brown, then flip and cook for an additional 1-2 minutes until cooked through. Remove from heat and set aside.

Preparing the Salad

    In a large bowl, add the seasonal greens and baby tomatoes.

    Sprinkle the toasted pistachios and crumbled bleu cheese over the salad mixture.
