Making Lavender Syrup

    Prepare the Lavender Syrup

    In a small saucepan, combine the dried lavender flowers, granulated sugar, and water. Heat over medium heat until the sugar dissolves and the mixture comes to a gentle simmer.

    Simmer and Steep

    Once simmering, reduce the heat to low and let the mixture steep for about 15 minutes, allowing the lavender flavor to infuse the syrup.

    Strain and Cool

    Remove from heat and strain the syrup through a fine mesh sieve into a clean container, discarding the lavender flowers. Let the syrup cool completely before using.

Mixing the Cocktail

    Combine Ingredients

    In a cocktail shaker, add 2 oz of Hendrick's Gin, 1 oz of fresh lemon juice, and 1 oz of the housemade lavender syrup.

    Shake with Ice

    Fill the shaker with ice and shake vigorously for about 15 seconds to chill the mixture.

    Strain and Serve

    Strain the mixture into a glass filled with ice.

    Add Soda Water

    Top with 2 oz of soda water and gently stir to combine.

    Garnish

    If desired, garnish with a sprig of fresh lavender or a lemon twist before serving.
