Sear the Lamb
In a large tagine or heavy-bottomed pot, heat the olive oil over medium-high heat. Add the lamb chunks and sear until browned on all sides, about 5-7 minutes. Remove the lamb and set aside.

- 4
Add Spices
Stir in the ground cumin, cinnamon, ginger, paprika, salt, and black pepper. Cook for another minute until fragrant.
- 5
Combine Ingredients
Return the seared lamb to the pot. Add the dried apricots and pour in the broth. Stir well to combine all ingredients.
- 6
Simmer the Tagine
Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let it cook slowly for 1.5 to 2 hours, or until the lamb is tender.
- 7
Finish with Almonds
During the last 10 minutes of cooking, sprinkle the sliced almonds over the top of the tagine.
- 8
Garnish and Serve
Once cooked, remove from heat and garnish with chopped cilantro. Serve hot with couscous or bread.
