For the Buffalo Chicken Nuggets

    Prepare the Chicken

    Cut the chicken breast into bite-sized nugget pieces and set aside.

    Set Up Breading Stations

    In one bowl, combine the flour, cornstarch, salt, black pepper, garlic powder, and onion powder. In another bowl, whisk together the eggs and buttermilk.

    Bread the Chicken

    Dip each chicken piece first into the flour mixture, then into the egg mixture, and finally back into the flour mixture to coat well.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Nuggets

    Fry the breaded chicken pieces in batches until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.

For the Buffalo Sauce
