Cucumber Syrup Preparation

Prepare the Cucumber
Wash the cucumber thoroughly. Peel it if you prefer a smoother syrup, and then chop it into small chunks.

Cook the Syrup
In a saucepan, combine the chopped cucumber, granulated sugar, and water. Heat over medium heat, stirring until the sugar dissolves completely.

Simmer
Bring the mixture to a gentle simmer and cook for about 10 minutes. The cucumber should soften, and the syrup will take on a light green color.

Strain the Syrup
Remove the saucepan from heat and let it cool slightly. Strain the mixture through a fine mesh sieve into a clean container, discarding the solids. Allow the syrup to cool completely before using.

Fill the Shaker
In a cocktail shaker, add the Gray Whale small batch gin, cucumber syrup, and cold pressed lemon juice.

Fill the shaker with ice cubes to the top.

Secure the lid on the shaker and shake vigorously for about 15 seconds until the mixture is well chilled.
